Sticky Honey Garlic Salmon Bowl with Perfect Roasted Broccoli

A quick and easy weeknight dinner featuring flaky, caramelized salmon with a sticky honey garlic glaze, charred roasted broccoli, and fluffy rice. This balanced bowl is healthy, delicious, and ready in about 30 minutes.

  • 2 (6-ounce) salmon fillets, skin on or off
  • ¼ cup honey
  • 3 tablespoons low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • Salt and black pepper to taste
  • 1 tablespoon avocado oil or olive oil
  • 3 cups broccoli florets (about 1 large head), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • 2 cups cooked jasmine or basmati rice
  • 1 tablespoon sesame seeds
  • 2 green onions, thinly sliced
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Wash and cut broccoli into bite-sized florets. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. In a large bowl, toss broccoli florets with 2 tablespoons olive oil, ½ teaspoon garlic powder, salt, pepper, and red pepper flakes if using. Spread in a single layer on prepared baking sheet. Roast for 15-18 minutes, flipping halfway, until edges are charred and stems are tender-crisp.
  3. While broccoli roasts, make the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Whisk and bring to a gentle simmer over medium heat. Let bubble for 2-3 minutes. In a small bowl, mix cornstarch with water to make a slurry. Pour slurry into simmering sauce, whisk constantly until thickened and glossy. Remove from heat.
  4. Heat 1 tablespoon avocado oil in a large non-stick skillet over medium-high heat. Place salmon fillets skin-side down (if using skin-on). Press gently with a spatula. Cook for 4-5 minutes without moving. Flip and cook for another 2-3 minutes.
  5. Reduce heat to low. Spoon about half the honey garlic sauce over the salmon. Let caramelize for about 1 minute, spooning sauce over the top. Salmon should flake easily with a fork.
  6. Assemble bowls: Divide cooked rice between two bowls. Arrange roasted broccoli and glazed salmon on top. Drizzle remaining sauce over broccoli and rice. Garnish with sesame seeds, green onions, and avocado slices if desired.

Notes

Pat salmon dry for best sear. Don’t skip the cornstarch slurry—it creates the sticky glaze. Make extra sauce if desired. For spicy version, add sriracha or gochujang to sauce. Store components separately in fridge for up to 3 days. Reheat salmon in skillet with splash of water or extra sauce.
