This Sweet Smoky Brown Sugar Bourbon Salmon comes together in about 20 minutes with a sticky, smoky-sweet glaze that clings to every flake. A simple weeknight dinner that feels special without complicated techniques.

  • ¼ cup packed brown sugar (light or dark)
  • 3 tablespoons bourbon
  • 1½ teaspoons smoked paprika
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce (low-sodium preferred)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley or chives for garnish (optional)
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in upper third. Let salmon sit at room temperature for 10 minutes.
  2. Pat salmon fillets dry with paper towels. Season both sides lightly with salt and black pepper.
  3. In a small bowl, whisk together brown sugar, bourbon, smoked paprika, soy sauce, Dijon mustard, and a pinch of black pepper. Set aside.
  4. Heat a large oven-safe skillet over medium-high heat for 2 minutes. Add butter and let melt, swirling to coat. Add minced garlic and stir for 30 seconds until fragrant.
  5. Pour glaze mixture into skillet; it will bubble. Stir to combine with butter. Cook for 1 minute until slightly thickened.
  6. Place salmon fillets in skillet, skin-side down. Spoon some glaze over tops.

Notes

For a non-alcoholic version, replace bourbon with apple cider or apple juice mixed with 1 teaspoon vanilla extract. Double the glaze if you want extra sauce. Let salmon rest 2 minutes before serving. Watch the broiler carefully to prevent burning.
