Ingredients

  • Aged Cheddar, 6 ounces, sliced into thin wedges
  • Goat Cheese Log, 4 ounces, sliced into rounds
  • Manchego, 4 ounces, shaved with a vegetable peeler
  • Prosciutto, 4 ounces, thinly sliced
  • Salami, 4 ounces, sliced into thin rounds (Genoa salami preferred)
  • Soppressata, 3 ounces, sliced
  • Fig Jam, ½ cup
  • Honey, 2 tablespoons (optional)
  • Whole Grain Mustard, 2 tablespoons
  • Fresh Grapes, 1 cup, red or green, in small clusters
  • Dried Figs, ½ cup, halved
  • Dried Apricots, ½ cup
  • Marcona Almonds, ½ cup
  • Walnuts, ½ cup, toasted
  • Pumpkin Seeds, ¼ cup, toasted
  • Fresh Rosemary Sprigs, 3-4, for garnish
  • Fresh Thyme, a few sprigs, scattered
  • Apple Slices, 1 apple, thinly sliced (Honeycrisp or Granny Smith)
  • Pear Slices, 1 pear, thinly sliced (Bosc or Anjou)
  • Water Crackers, 1 box
  • Baguette Slices, 1 small baguette, sliced into ¼-inch rounds and toasted
  • Fig & Olive Crackers, ½ box (optional)

Instructions

  1. Set out the cheeses (brie, cheddar, goat cheese, manchego) at room temperature for at least 10 minutes.
  2. Toast the baguette slices at 350°F for 5-7 minutes until golden and crisp. Let cool.
  3. Slice the apple and pear thinly, toss with lemon juice to prevent browning. Halve dried figs and apricots. Rinse and pat dry grapes.
  4. Place small bowls on the board for fig jam, honey, and mustard, spacing them evenly.
  5. Add the cheeses: place brie whole, fan cheddar wedges, cluster goat cheese rounds, and pile manchego ribbons.
  6. Add the meats: fold prosciutto into loose ribbons, fan salami rounds, and stack soppressata slices.
  7. Fill in with fruits and nuts: tuck grapes, dried figs, apricots, almonds, walnuts, and pumpkin seeds around the board. Fan apple and pear slices near edges.
  8. Arrange water crackers, toasted baguette slices, and fig & olive crackers in separate clusters.
  9. Garnish with rosemary and thyme sprigs. Drizzle honey over brie and goat cheese. Sprinkle flaky sea salt over the board.
  10. Serve immediately within an hour of assembly.

Notes

Temperature is key: let cheeses sit at room temperature for at least 20 minutes. Don’t overcrowd the board; leave about 20% empty. Balance textures and flavors. Prep everything an hour ahead, then assemble right before guests arrive.
