A warm, fruity dessert with a buttery oat crumble topping, no pie crust needed. Perfect for fall gatherings or a cozy night in.

Ingredients

Scale
  • 6 medium apples (Granny Smith and Honeycrisp recommended), peeled, cored, and sliced
  • 1 cup dried cranberries
  • 1/2 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Prepare the apples: peel, core, and slice into 1/4-inch thick slices (about 6 cups).
  3. Make the filling: In a large mixing bowl, combine sliced apples, dried cranberries, brown sugar, flour, lemon juice, vanilla, cinnamon, nutmeg, and salt. Toss until apples are evenly coated.
  4. Transfer the filling to a greased 9-inch pie dish or cast iron skillet. Spread into an even layer.
  5. Make the crumble topping: In a medium bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter chunks.
  6. Assemble the pie: Sprinkle the crumble topping evenly over the fruit filling. Do not press down.
  7. Bake: Place the dish on a baking sheet. Bake for 40-45 minutes, until the filling is bubbling thickly around the edges and the crumble topping is deep golden brown.
  8. Cool before serving: Let the pie cool on a wire rack for at least 20 minutes to allow the filling to set.
  9. Serve warm or at room temperature. Spoon into bowls and top with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

For a gluten-free version, use a 1:1 gluten-free baking blend. For a dairy-free version, use cold coconut oil or vegan butter. Let the pie cool for at least 20 minutes before serving to allow the filling to set. Store leftovers covered in the refrigerator for up to 4 days.
