Ultimate Loaded Nacho Bar for Super Bowl Parties

  • 1 lb ground beef (80/20 works best)
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup beef broth or water
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk (warm)
  • 2 cups shredded sharp cheddar cheese (freshly shredded)
  • ¼ teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed (optional)
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup pico de gallo or salsa
  • 1 cup pickled jalapeños (drained)
  • 1 cup diced tomatoes
  • 1 cup sliced black olives
  • ½ cup chopped fresh cilantro
  • 2 green onions, sliced
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for about 3 minutes until soft. Add minced garlic and cook for 30 seconds. Add ground beef and cook for 6-8 minutes until browned. Drain excess fat if desired.
  2. Reduce heat to medium-low. Add chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir to coat beef. Pour in beef broth and simmer for 2-3 minutes until most liquid is absorbed. Adjust seasoning and keep warm.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Slowly pour in warm milk while whisking continuously. Cook until thickened, about 3-4 minutes.
  4. Reduce heat to low. Add shredded cheddar cheese a handful at a time, stirring until melted. Stir in cayenne pepper if using and salt to taste. Keep warm over low heat, stirring occasionally.
  5. Prepare toppings: drain and rinse beans, dice tomatoes, slice green onions, chop cilantro, cut lime into wedges. Arrange in small bowls.
  6. Arrange tortilla chips on a large serving platter or sheet pan in a single layer with slight overlap. Spoon seasoned beef over chips, followed by black beans and pinto beans. Drizzle cheese sauce generously over everything.
  7. Optional: Bake at 350°F for 5 minutes to make chips extra crispy and cheese bubbly.
  8. Set out bowls of toppings: sour cream, guacamole, pico de gallo, pickled jalapeños, diced tomatoes, black olives, cilantro, green onions, and lime wedges. Let everyone build their own plate.

Notes

For best results, shred cheese from a block to avoid anti-caking agents. Warm milk before adding to roux to prevent lumps. Drain beans thoroughly to avoid watery nachos. Keep cheese sauce warm in a mini slow cooker for parties.
