  • 3 large sweet potatoes (about 2 pounds or 900g), peeled and cubed
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup maple syrup (60ml)
  • 1/4 cup milk (60ml)
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (60g)
  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup brown sugar (50g), packed
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or cooking spray.
  2. Place the peeled and cubed sweet potatoes in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 12-15 minutes, until fork-tender. Drain well and let steam dry for a couple minutes.
  3. Return the drained sweet potatoes to the pot or transfer to a large bowl. Mash until smooth. Let cool for 5 minutes.
  4. To the mashed sweet potatoes, add the melted butter, maple syrup, milk, beaten eggs, vanilla, cinnamon, nutmeg, and salt. Stir until well combined and silky.
  5. In a medium bowl, combine the chopped pecans, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter, two forks, or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  6. Pour the sweet potato filling into the prepared baking dish and spread evenly. Sprinkle the pecan streusel evenly over the top.
  7. Bake for 25-30 minutes, until the filling is set around the edges and the streusel is golden brown and fragrant. If the streusel is browning too quickly, tent loosely with foil for the last 10 minutes.
  8. Let the casserole cool for 5-10 minutes before serving. Serve warm or at room temperature.

Notes

Don’t over-boil the sweet potatoes; they’ll become waterlogged. Cold butter is essential for a crunchy streusel. Toast pecans first for deeper flavor. The casserole can be assembled ahead and refrigerated for up to 24 hours (add 10 minutes to baking time).
