  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 1/4 cup (60ml) caramel sauce, homemade or store-bought
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 cup (55g) cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Vanilla ice cream or whipped cream (for serving, optional)
  • Extra caramel sauce for drizzling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place a 6-inch cast iron skillet inside to warm up.
  2. Peel, core, and slice apples into 1/4-inch thick slices. Place in a medium mixing bowl.
  3. Add granulated sugar, 1 tablespoon flour, 1 teaspoon cinnamon, nutmeg, and lemon juice to the apples. Toss to coat evenly. Let sit for 1-2 minutes.
  4. In a small bowl, combine rolled oats, 1/4 cup flour, brown sugar, 1/2 teaspoon cinnamon, and salt. Stir with a fork.
  5. Add cold butter cubes to the dry ingredients. Use a pastry cutter or fork to cut the butter in until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  6. Carefully remove the hot skillet from the oven. Spoon caramel sauce over the bottom of the skillet.
  7. Pour the apple mixture into the skillet and spread into an even layer. Sprinkle the crisp topping evenly over the apples.
  8. Bake for 25-30 minutes, until the topping is golden brown and the apples are bubbling. If topping browns too quickly, tent with foil for the last 5-10 minutes.
  9. Remove from oven and let cool for 10-15 minutes before serving. Serve warm with ice cream or whipped cream and extra caramel sauce if desired.

Notes

Don’t skip the cooling step—it allows the filling to set up. For best results, use a mix of sweet and tart apples. The topping can be chilled for 10 minutes before baking if your kitchen is warm.
