These Easy No-Bake Monster Eyeball Cake Pops are the perfect Halloween treat—fun to make, easy to customize, and absolutely delicious. They’re a conversation starter and the star of any spooky spread.

  • 1 box (15.25 oz) vanilla cake mix
  • Ingredients called for on the cake mix box (typically eggs, oil, and water)
  • 1/2 cup (120g) cream cheese frosting
  • 12 oz (340g) white candy melts or white chocolate melting wafers
  • 1/2 cup (90g) blue candy melts
  • 1 tablespoon (15ml) coconut oil or shortening
  • Black gel food coloring
  • Red gel food coloring
  • White candy pearls or small white sprinkles
  • 24 lollipop sticks
  • 1 block of styrofoam or a cake pop stand

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the cake mix according to the package directions—usually that means combining the mix with eggs, oil, and water. Pour the batter into a greased 9×13 inch pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  2. Once the cake is completely cool, crumble it into a large mixing bowl. You want fine, even crumbs—no large chunks. Add the 1/2 cup of cream cheese frosting and mix it in with your hands or a spatula. The mixture should hold together when you squeeze it, like damp sand. If it’s too dry, add a tablespoon more frosting. If it’s too wet, add a little more cake crumb.
  3. Scoop out about 1.5 tablespoons of the cake mixture and roll it into a smooth ball. Place each ball on a parchment-lined baking sheet. You should get about 24 balls. Once they’re all rolled, pop the tray in the freezer for 15-20 minutes.
  4. While the cake balls are chilling, melt the white candy melts. Place them in a microwave-safe bowl and heat in 30-second intervals, stirring after each, until completely smooth. Add 1 tablespoon of coconut oil or shortening if the mixture is too thick. Let it cool for a few minutes before dipping.
  5. Remove the cake balls from the freezer. Dip the tip of a lollipop stick into the melted white chocolate, then insert it about halfway into a cake ball. Dip the entire cake ball into the melted white chocolate, covering it completely. Gently tap the stick on the edge of the bowl to let excess chocolate drip off. Insert the stick into your styrofoam block and let it set for about 10 minutes.
  6. While the white coating is still slightly tacky (or after it’s fully set—either works), it’s time to decorate. Melt the blue candy melts in a separate bowl. Transfer to a small piping bag or zip-top bag and snip off a tiny corner. Pipe a small circle in the center of each cake pop—this is the iris. Let it set for 5 minutes.
  7. Using the black gel food coloring and a toothpick, dot a small pupil in the center of each blue iris. Then, take a white candy pearl or small white sprinkle and place it just off-center on the blue iris.
  8. For the bloodshot effect, dip a clean toothpick into the red gel food coloring and drag thin, jagged lines from the edge of the white coating toward the iris.
  9. Allow the cake pops to set fully in the styrofoam block for at least 30 minutes. If you’re in a hurry, you can pop them in the fridge for 15 minutes.

Notes

Don’t overmix the cake and frosting. Use a cookie scoop for even sizing. Let the chocolate cool before dipping. Work in small batches. Tap the stick gently after dipping to remove excess chocolate. Fix cracks immediately.
