A quick and easy one-pan chicken and stuffing bake perfect for Friendsgiving. Juicy chicken thighs are topped with a creamy, golden stuffing, all baked together in one dish for minimal cleanup and maximum flavor.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 (12-ounce) box seasoned stuffing mix (e.g., Pepperidge Farm Herb Seasoned Stuffing)
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped celery (optional)
  • 1/4 cup chopped onion (optional)
  • Fresh parsley, chopped (for garnish)
  • Cranberry sauce (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Pat chicken pieces dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  3. Arrange seasoned chicken in a single layer in the prepared baking dish.
  4. In a large bowl, combine dry stuffing mix, melted butter, celery, and onion (if using). In a separate bowl, whisk together cream of mushroom soup, sour cream, and chicken broth until smooth. Pour the liquid mixture over the dry stuffing mix and stir until evenly moistened.
  5. Spoon the stuffing mixture evenly over the chicken pieces. Do not press down.
  6. Cover the dish tightly with aluminum foil and bake for 30 minutes.
  7. Remove foil carefully and continue baking for 10-15 minutes, until stuffing is golden brown and chicken reaches an internal temperature of 165°F (74°C). For extra browning, broil for 1-2 minutes.
  8. Let the dish rest for 5 minutes before serving. Garnish with fresh parsley and serve with cranberry sauce.

Notes

For best results, use a meat thermometer to ensure chicken reaches 165°F. Let the dish rest before serving to allow juices to redistribute. The stuffing can be prepped up to 24 hours in advance and refrigerated; add 10 minutes to covered baking time if starting from cold.
