This honey garlic baked salmon features a perfectly caramelized glaze and shatteringly crispy skin. It’s a quick, easy, and impressive dish that’s perfect for weeknight dinners or entertaining.

  • 4 salmon fillets (about 6 oz / 170g each), skin-on
  • 1/4 cup (85g) honey
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil (optional)
  • 1 teaspoon (3g) cornstarch
  • Salt and pepper to taste
  • 1 tablespoon (15ml) olive oil or avocado oil
  • Optional garnishes: sliced green onions, toasted sesame seeds, lemon juice

Instructions

  1. Prep the Salmon: Remove salmon from fridge 10 minutes before cooking. Pat extremely dry with paper towels, especially the skin. Season both sides with salt and pepper. Place skin-side up on a plate and refrigerate uncovered for 10-15 minutes if time allows.
  2. Make the Glaze: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, sesame oil, and cornstarch. Whisk until cornstarch dissolves. Bring to a gentle simmer over medium heat, whisking constantly, for 2-3 minutes until thickened. Remove from heat.
  3. Preheat the Oven: Preheat oven to 400°F (200°C). If using a cast iron skillet, place it in the oven to preheat. If using a baking sheet, line with parchment paper or foil and brush lightly with oil.
  4. Prepare for Baking: If using a preheated cast iron skillet, carefully remove from oven and place over medium-high heat. Add oil and swirl. Place salmon skin-side down and cook undisturbed for 2-3 minutes to crisp the skin. If using a baking sheet, place fillets skin-side down on the prepared sheet.
  5. Glaze and Bake: Brush about half the glaze over the top and sides of the salmon. Bake for 8-10 minutes, then brush on another layer of glaze. Continue baking for 3-5 minutes, until salmon is opaque and flakes easily (internal temperature 125-130°F / 52-54°C for medium).
  6. Broil for Extra Crispiness: Switch oven to broil. Brush salmon with remaining glaze. Broil for 1-2 minutes, watching carefully to prevent burning.
  7. Rest and Serve: Remove from oven and let rest for 2 minutes. Transfer to a platter, spoon extra glaze from the pan over the top. Garnish with green onions, sesame seeds, and lemon juice if desired.

Notes

For the crispiest skin, pat the salmon extremely dry and let it air-dry in the fridge. Don’t overcrowd the pan. Watch the broiler closely to prevent burning. The glaze can be made up to 3 days ahead.
