These perfect small-batch chocolate chip cookies require no chilling and deliver warm, chewy, chocolatey cookies in under 20 minutes. Made with simple pantry ingredients, this recipe yields exactly 6 cookies with golden edges, soft centers, and melty chocolate in every bite.

Ingredients

Scale
  • 4 tablespoons (57g) unsalted butter, melted
  • 3 tablespoons (38g) granulated sugar
  • 3 tablespoons (43g) light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ cup + 1 tablespoon (75g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a small baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 15-second intervals or in a small saucepan over low heat. Let it cool for about a minute.
  3. In a medium mixing bowl, whisk together the melted butter, granulated sugar, and packed light brown sugar until smooth and well combined (about 30 seconds).
  4. Add the egg yolk and vanilla extract. Whisk vigorously until the mixture becomes lighter in color and slightly thickened (about 1 minute).
  5. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Pour the flour mixture into the butter-sugar mixture. Fold gently with a rubber spatula or wooden spoon just until no streaks of flour remain (about 15 to 20 strokes).
  7. Fold in the chocolate chips until evenly distributed.
  8. Using a cookie scoop or tablespoon, portion the dough into 6 equal portions (about 1.5 tablespoons each). Place them on the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 9 to 11 minutes. The cookies should have golden edges and slightly soft, pale centers.
  10. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack. Enjoy warm.

Notes

For best results, use room temperature egg yolk. Measure flour correctly by spooning and leveling. Don’t overmix the dough. Watch the bake time carefully; cookies continue to bake on the hot sheet after removal. For picture-perfect round cookies, gently swirl a round cookie cutter or glass over each cookie right out of the oven. Store leftovers in an airtight container at room temperature for up to 3 days; place a slice of bread in the container to keep them soft. Freeze baked cookies for up to 3 months.
